Dark kitchens are here to stay...

While home-cooking is declining, food delivery have exponentially grown and is even predicted to reach a $350Bn market by 2030 (so x10 compared to 2018!). It appears that traditional restaurants and fast-foods cannot address all the demand (in terms of volume x price x quality) by themselves, as it is just not in their best interest to prioritize delivery sales over in-store sales.

As a result, dark kitchen have emerged with competitive offers, usually sold through meal delivery platforms…. but we do not know in what form. What is the way forward for entrepreneurs?
